The Sweet Potato Version

Are you looking for a quick, but healthy meal? Sweet potato shepherd’s pie (pressure cooker style) is a favorite in the Miller home. The last time we made Whole 30 approved shepherd’s pie in a casserole dish, it took us several hours to complete. The beauty of a pressure cooker is that you can create a meal with the same flavor profile and in literally a fraction of the time. I hope you enjoy this meal as much as we do!

Pressure Cooker Recipe: Sweet Potato Shepherd’s Pie

Ingredients:

  • 1 lb. ground lamb
  • 1 tbsp. ghee or butter
  • 2 tbsp. dried thyme
  • 1 tbsp. dried oregano
  • 2 tsp. dried basil
  • 2 tsp. salt
  • 3 cloves of garlic (pressed or minced)
  • 1 medium onion (chopped)
  • 2-3 medium sweet potatoes (peeled and largely chopped)
  • 2 cups mushrooms (chopped)
  • 4 medium carrots (peeled and chopped)
  • 4 stalks celery (chopped)
  • 3 large handfuls of mixed greens
  • 1/2 cup unfiltered, raw apple cider vinegar

Instructions:

  1. Set the pressure cooker on sauté mode and add ghee. Once melted, add the lamb, thyme, oregano, basil, and salt. Cook until the meat is browned. While sautéing, be sure to break up the meat so it will evenly mix with the other ingredients.
  2. Add the chopped garlic, onion, sweet potatoes, mushrooms, carrots, celery, mixed greens, and apple cider vinegar.
  3. Secure the lid, close the pressure valve, and set the timer for 30 minutes.
  4. Once the timer is finished, release the pressure valve, open the lid, stir up the contents, and vualá — you have deconstructed sweet potato shepherd’s pie.

Not only is this meal loaded with nutrition and fiber, but it also has a TON of prebiotic foods, including sweet potatoes, carrots, mushrooms, onion, garlic, and apple cider vinegar.

Whenever Chris and I are working on creating or modifying a recipe, we always ask ourselves the question, “What other vegetables can we add to this?” In addition to the ingredients listed in the recipe, we also enjoyed this meal with beets, but in order to stay true to a more traditional shepherd’s pie flavor, we omitted it this time around. With that said, feel free to literally throw in anything that you have (if we’re being perfectly honest, that’s typically how meal prep goes down at the Miller’s!)
